Beginning a career as a barista
If you ask Steven Hall, with Rollick’s Specialty Coffee, what the most important quality a Barista has. He’ll tell you.
“You have to be a people person. By far, that’s the most important quality” said Hall.
But don’t let that fool you. He also knows the science behind every “Cup of Joe.”
According to Hall, “There’s light roast, dark roast, medium roast. The lighter the coffee is the more caffeine it has. Espresso is a different creature. The way it’s ground, then poured. It also has to have the right water pressure.”
Steven’s been a store manager for Rollicks in Salinas for five years. A job he says can be demanding especially during morning rush.
“Sometimes you get some interesting people. You just have to keep a level head. I think that’s the biggest challenge. You have to be prepared” said Hall.
For those looking to master the art, Steven’s offers a bit of advice; let patience brew.
Hall says, “I’d recommend learning how to multitask and work in a demanding situation.”

“We get a lot of regulars. We, as a company rely on those regulars. They know me and I know their drink. It’s fun to see the same people and see the look on their face when I order their drink before they order. It’s good, I like the relationships” Hall said.
